Paradero Todos Santos

On the Pacific coast of Baja California Sur at Todos Santos, a historic agricultural town that has developed over the past two decades into one of Mexico’s most concentrated communities of artists, surfers, and gastronomes, Paradero Todos Santos occupies an estate of desert scrub and organ cactus above the Pacific with views across the agricultural valley that has sustained the town’s identity as an oasis of date palms and mango orchards in the Baja landscape since the eighteenth century. The 35 rooms and suite-style accommodations are designed with a desert contemporary aesthetic — natural rammed earth, handwoven cotton, local stone — that reflects the Baja’s own material culture and environmental conditions rather than importing the design language of mainland Mexico’s luxury hotel industry. The hotel’s position at the edge of the desert and the Pacific provides two entirely different environments within walking distance of the room terrace.

The restaurant and culinary programme draw on both the Pacific seafood of the Todos Santos coast — the tuna, yellowtail, and lobster of the Baja’s offshore waters — and the agricultural production of the irrigated valley below: the mangoes, avocados, organic vegetables, and artisan cheeses that small producers in the area have developed in response to the growing food culture of the international community that has made Todos Santos its home. The mezcal and wine programme draws on the Baja California’s wine country 200 kilometres to the north in the Valle de Guadalupe, where the Mexican wine industry’s most interesting producers are concentrated. Surf at the Todos Santos beach break, whale watching in the Pacific between January and March, and visits to the Todos Santos artists’ studios and galleries round out the activity programme.
