The Madonie Natural Park, which surrounds the estate, is one of Sicily’s least visited and most biologically rich mountain territories, with endemic plant species, a surviving population of Sicilian fir trees, and the spring flowering of the highlands that makes March and April at this elevation among the most visually spectacular months in the Sicilian interior. The estate’s olive grove and vineyard produce oils and wines of genuine estate character.

The kitchen’s menu draws on the Sicilian interior culinary tradition — the durum wheat pasta preparations of the Madonie, the lamb and kid from the estate’s flock, the ricotta and aged pecorino of the local shepherd communities, and the wild herbs, capers, and bitter greens of the mountain landscape — in a cooking programme that has no equivalent among the coastal Sicilian hotels whose menus prioritise seafood and the well-known Sicilian dessert canon.
